Holiday Cheer is #MangoJoy

Mango-Centric recipes sure to bring in some needed holiday cheer!

It’s been a heck of a few years and it’s looking like the year ahead isn’t going to give us too much of a COVID break. But if we have learned anything in these past COVID years, it’s how to find and feel the joy regardless of our circumstances. How to move past the difficulties and support each other and our communities, which is for us on both sides of the border.

We anticipate another difficult season with climate change, COVID and the general problems of the world that seem to keep coming at full force! We are hunkered down with our families, resting and  celebrating for the next few weeks feeling gratitude and love and preparing for the 2022 season which will begin at the end of January. Whatever will happen in 2022, we promise that we are here to bring much more #MangoJoy than ever before and are always prepared to do so…

So regardless of if you are traveling this holiday season, or staying put, be kind and loving to each other. And seek and feel joy!

Another holiday winner from the Crespo Organic Kitchen!

You know how much I hate mango recipes that seem meaningless, like someone just tossed mangoes into an already perfect recipe and they think they had a clever idea.  Not even examining the ideal way to incorporate a mango into the recipe. The way mangoes are often put into recipes, especially by people selling the commodity is often reckless.

Creating recipes for commodities is difficult. On one hand you must be constantly churning out new ideas and on the other, at least if you are like me- they need to be realistic, delicious and lead people to want to make them again and again.  Most of the people that want mango recipes, are generally mango lovers. I feel significant obligation in making sure all the recipes that I or anyone in the Crespo Organic Kitchen creates are not just marketing gimmicks designed to get those folks to buy more mangoes but truly practical and genius ways of teaching  mango lovers how to incorporate the essence of fruit they love into really beautiful, easy to pull off final dishes and flavors.  We want to teach them the amazing culinary versatility of mangoes and ideally help bring their own tasty ideas to fruition.  People will naturally buy more mangoes the more we can educate mango eaters on the bounty of mango joy, mangoes offer.

Authentic Mexico, Mangonadas from Scratch

A Crespo Organic Kitchen Cooking Class

Class Description: This is a very special class to cap off Mango Mania, where we’ll make our favorite Mexican street drink – the Mangonada – and all its components from scratch, including Homemade Chamoy and Tamarindo Candy Straws. Bright orange mango sorbet with chamoy rippled throughout and topped with fresh mangoes. The mangonada is a summertime staple in Mexican communities and the Crespo Organic Kitchen is going to take a stab at making it from scratch, right along side you!

We will make the chamoy from scratch—a savory, lightened pickeld condiment made from dried stone fruit. We will even make our own house Tajín seasoning (a lime-flavored chili powder). And the signature candy tamarind straw too, we wont forget to make that too!

Most of the stuff you’d buy from the store today is so laden with salt, sugars, processed-everything that we want to recreate this incredible treat the old way (which is also the healthier, fresh way).

Class Description: Crespo Organic’s hometown is ceviche heaven. This class pays homage to the king of ceviche. We’ll go over proper mango cutting methods for ceviche, how to select your fish and any other ingredients for maximum freshness. On Nissa’s last trip, she picked up a few tips and tricks and a special hot juice that she’ll show you sets this ceviche apart. You’ll learn how to make a simple and fresh ceviche using tuna, mangoes and avocadoes, plus a new recipe inspired by our Mazatlán roots! We’ll also make her favorite Mazatlán Pueblo Bonito beach drink – the virgin piña colada – which pairs perfectly with these summer ceviches.

#ChooseYourCut: A Lesson on Mango Cutting

Class Description: This class is a no-BS introduction to the top ways to slice and dice a mango (visit this link for a sampling of cuts we may go over). We’re not into the cookie cutter method of doing things. We’ll meet you where you’re at based on your knife skills, mango varietals, and ripeness of the fruit to teach you how to hold your own while cutting your mangoes. We’ll have something for everyone, and we will even show you the advanced Mexican flower method! We will also whip up a few simple recipes putting all of our cuttings to good use (because we hate waste and love these recipes).

KICK IT! (Kids in the Crespo Kitchen) with a Popsicle Class

A Crespo Organic Kitchen Cooking Class

Class Description: Get your kids in the kitchen to learn to make naturally sweetened mango popsicles. We will “kiddify” our usual mango education, showing them how to cut mangoes using “the mango hack” but stick around because your kids will need an adult present. (Trust us, you’ll probably learn something, too). Note: We don’t use much sugar in this class. The kids will undoubtedly love them just the way they are. Also, it doesn’t matter if you have popsicle molds or not (if not, any old [clean] ice cube tray or cleaned yogurt cups will do), but we do recommend buying an inexpensive set online. They are so much fun for kids, and it may encourage them to eat more fresh fruit.

Summer Mango Quenchers on Zoom!

A Crespo Organic Kitchen Cooking Class

Class Description: In this class, you’ll learn how to make thirst-quenching summer mango drinks out of this summer’s bounty of mangoes! Here we will teach you how to whip up our favorite mango thirst-quenchers, perfect on a hot summer’s day. We’ll teach you how to prepare a light fruit-herb fermentation, how to add spice for depth, how to utilize coconut water for maximum hydration, how to create a mango pit syrup for iced tea, and we’ll show you our famous Mango-schino Cherry recipe. This class will demonstrate that you don’t need alcohol to have a good drink. In fact, nonalcoholic drinks can be more refreshing, more hydrating and less depleting of vitamins than alcoholic beverages; not to mention, they won’t make you sleepy in the heat. All of our classes will provide some basic mango education, such as how to choose, store and cut mangoes and a little bit about mango varietal nuances, as well! We’ll also discuss how to pick and choose your flavor pairings and potencies.

Mango-Centric recipes for the Super Bowl win!

My father watched a lot of football when I was a little girl. He used to gamble on games and have 7-8 TV’s playing all the games at once. I knew everything about football from a very young age. I never loved it, but I did know more than most young girls and women about the sport and to some extent still do.

The one thing I have always loved about the Super Bowl is the holiday like food preparations that go into watching the game with friends or family. I don’t watch a lot of football these days but I still dig making the food.

Super Bowl food, much like Thanksgiving food, tends to encompass the same items time and time again. Lots of meats, lots of drinks, chips and salsas, guacamole and some sweet stuff.

We perused our Crespo Organic recipes and found some of our favorite “touchdown!” worthy bites that seem perfect for Sunday’s big game, regardless of whether your team wins or loses. We chose simple, tasty and mango-centric dips, wings, BBQ, salsas, drinks and sweets that will score big with your TV watching team, even those that only love the commercials!

This seems like a great time for a shout out to KC, since I live in Missouri these days!

Missouri Mango Joy!

The Crespo Organic Kitchen & marketing offices relocate to the Ozarks

Much like children needing to live where their parents go, the Crespo Organic Kitchen has to move when I do. So, when I decided to move to Table Rock Lake in the Ozarks, it was mandatory that the Crespo Organic Kitchen and the marketing offices, come with me. It was one of those moves location wise that was peculiar at the onset, but now that it’s done just feels good for everyone, including Crespo Organic.

It was hard to move for me, from the gigantic California kitchen overlooking the deep blue Pacific Ocean, where the bulk of my mango photography, videography and education content for the Crespo brand was created. But, with little choice in the matter, I had a small amount of time to choose a place to live and work, and in the midst of a pandemic hovering over the world, a smart decision needed to be made; one that was good for my mango and food work as well as my spirit and my family.
