When life gives you ripe mangoes, make healthy soda….
We have a lot of recipes happening each week in the test kitchen for both Crespo Organic Kitchen and the Ger-Nis Culinary & Herb Center. Lemons and limes are a staple item for us, but they can often turn wrinkled or hard (limes) or moldy (lemons) before we get to use them, depending on things like weather, age of the fruit, quality of the crop and even how the weather was during the blooming stage of the fruit. Once a week we take any of our citrus that appear over the hill, and we juice them, mix them with mango puree and make a healthy, unsweetened soda. The Mango Lemon-Lime Ginger Soda is our signature test kitchen drink during Crespo Mango season! We have an after-hours adult version too—Mango Lemon-Lime Ginger Coolers.
